Spring into Spring with Maryland Produce

Even though we’ve skipped over spring and gone directly to summer (80 degrees & sunny, anyone?), spring produce is still making it’s appearance at Maryland farmers markets. Asparagus-Asparagus is a delicious vegetable. Try this easy, cheesy recipe for Roasted Asparagus from Eat Smart, Be Fit Maryland as a side-dish for a springtime meal!

SpinachSpinach is considered a “Superfood” for a reason-not only is it packed with nutrients, but it can be used in thousands of recipes. Chop it up as a base for a salad, blend it into a breakfast smoothie, or sauté it for a nutritious treat!

Strawberries-Strawberries are nature’s candy-they’re best eaten as is, after being washed properly. If you’re looking for something unique to make, try Fruit Salsa with Crunchy Cinnamon Chips!

Peas-Peas are a vegetable that can be eaten with minimal preparation-heat them up, sprinkle a bit of salt, pepper, and olive oil on them and you’re good to go!
